Growing sprouts and healthy microgreens: this is how it works

Sprouts are popular and are ideal for refining quark breads, soups or salads. You can simply grow them yourself - classically without substrate or on potting soil as microgreens.

Sprouts, which are also known as seedlings or seedlings, are the young shoots of seeds from vegetable or grain plants. The seedlings are very healthy, rich in valuable protein, vitamins, minerals and fiber.

Buy untreated seeds

Sprouts are full of healthy ingredients.

Instead of buying sprouts, you can grow them yourself quite easily and, above all, cheaply. In addition to the classic cress, the seeds of radishes, broccoli, lentils, onions and alfalfa are also suitable for cultivation. The sprouts of legumes such as mung beans, chickpeas or lentils can also be consumed. Nightshade plants such as tomatoes, potatoes and aubergines are unsuitable. It is important to use untreated seeds. Special sprout seeds are available in stores, and organic seeds are also well suited.

Sprouts and microgreens: what's the difference?

Microgreens germinate in soil and grow longer than sprouts.

Traditionally, sprouts are grown without a substrate. Instead of growing in soil, they grow on damp kitchen paper or germinate in containers moistened with water. They can be eaten after just a few days. There has been a new trend for some time: So-called microgreens, also known as green herbs, are considered "superfoods" due to their nutritional content.

These seedlings are traditionally sown in potting soil. The harvest usually begins after a week at the earliest and can take place over several weeks. Microgreens form chlorophyll, i.e. leaf green, and are therefore miniature plants with usually two to three leaves.

Draw sprouts on paper

The easiest way is to pull sprouts on paper like cress. To do this, for example, place kitchen paper in a baking dish, moisten it with water and distribute the seeds on it. After just a few days, the young plants have grown and can be eaten.

Sprout jars: Pay attention to hygiene

Another possibility is to use sprout jars, which are special jars with a sieve as a lid. If you like, you can also make a sprout jar yourself: To do this, simply drill holes in the plastic screw cap of a vessel. Put the seeds and some water in the glass and soak the whole thing for about eight hours. Then pour off the water through the sieve.

Rinse the glasses and the sprouts with fresh water twice a day, preferably in the morning and evening. After rinsing, place the glass so that the remaining water can drain off. The sprouts soak up moisture, but no large amounts of bacteria can form. Cleanliness is the top priority! Before the containers are reused for a new rearing, they must also be cleaned thoroughly so that no germs form.

Growing in sprout boxes

Another possibility for cultivation are so-called sprout boxes, which are commercially available. Usually four boxes are stacked on top of each other. The water is poured into the top bowl and then seeps through to the bottom. Excess water is collected in the bottom bowl.

Sow microgreens in potting soil

If you want to grow microgreens, distribute the seeds of, for example, lettuce, radishes, coriander or nasturtiums in a bowl filled with potting soil or in a flower pot. Carefully press the densely sown seeds and moisten them with water from a spray bottle. If the seeds are so-called dark germs, they must be covered with a thin layer of soil. This is not necessary with the light germs. Instructions are given on every bag of seeds.

Place the planter in a bright and warm location that is not exposed to direct sunlight. Cling film over the vessel ensures a uniform climate. The substrate must not dry out. To prevent mold from forming, the film should be removed daily for a short time to ventilate. Depending on the germination time of the various types of vegetables, the harvest can begin after a week or a little later.
